Pioneering Quality Beef
Wagyu and high-quality cattle were first bred in the late 1980s, and they knew this was special in its deep flavor and sublime marbling. Aging Beef
All Snake River Farms and Double D Ranch products are aged to maximize the flavor and texture of our beef. They employ two different methods:
Wet-Aging
A technique where subprimal cuts of beef are vacuum-sealed and allowed to rest in refrigeration for at least 21 days. Natural enzymes tenderize the beef and allow deeper flavors to develop. The product is not exposed to the air, so no weight loss exists. Our products are wet-aged 21 days or more before they are packaged and shipped.
Dry-Aging
This is a unique process in which beef subprime is placed in a carefully controlled environment to intensify its natural flavor and make it more tender. All products are dry-aged for a minimum of 45 days to enhance the flavor.
How are the animals fed?
Snake River Farms American Wagyu Beef cattle are grass and hay fed on pasture for the first year of their life. They are fed a sustainable diet of hay, forages, potatoes, vitamins, and minerals. SRF cattle will never receive any growth agents or growth-promoting hormones.

This steak is American Wagyu Black Grade, rated 6 to 8 on the Japanese Beef Marbling Score (BMS) Beef sold in the U.S. is graded by the United States Department of Agriculture (USDA). There are eight grades in total, and the top grade is USDA Prime. All Snake River Farms American Wagyu beef grades above Prime. Special breeds of cattle, like Japanese Wagyu, can produce marbling beyond their American counterparts. We adopted the Japanese Beef Marbling Score to grade this high level of marbling. Using BMS, beef marbling is measured on a scale from 1 to 12, with a 1 being Select beef and a 12 being the highest level of marbling possible. My Review of American Wagyu Teres Major
The product arrived well-packaged and completely frozen. Not a speck of silver skin or gristle. These are wonderful and will be a welcome meal when my son returns from college for winter break. They can’t come home for Thanksgiving so I wanted to be sure there is something extra special for that 4-week break. The meat itself was tender and flavorful. It's a fantastic product that I would order again! Get the pictured meat American Wagyu Teres Major (Aff), or see all Snake River Farms American Wagyu Beef offerings Snake River Farms American Wagyu Beef. Really nice steaks. Tasty and tender. Some of them are a little odd-shaped but cook up great. I pan-fried them in butter to seal them and baked them for 5 minutes at 400 degrees. Perfect Medium rare and tender. Highly recommended. I ordered some ribeyes just based on the taste of the first order. Best steak I've ever had, well worth the price…and I qualify that by saying that the price restricts this to a rare-special-occasion-only purchase. I've paid good money at excellent steak houses (including wagyu steak) and this is by far the best. Thanks for a great meal!
